Is this your service? Since you've made seven posts to HN about it and also your username shows up in the commits on their GitHub.
Because I'm quite curious on where the IPs are from. Usually residential IPs is a fancy wording for malware infested devices from regular people.

Stripe is a payment processor which basically means they process the payments for you, so you do have to figure out the tax part yourself (or use their tax product, but you're still the one responsible for it.)
Lemon Squeezy is a merchant of record which means _they_ act as the merchant and sell the product to your customer. So they'll collect VAT and make sure it lands in the pockets of the right country etc. and will pay you only the remainder (minus their cut).
Since Lemon Squeezy uses Stripe under the hood as their payment processor you had to basically pay a cut to two companies if you used Lemon Squeezy but in exchange you literally have to worry about nothing. You just get a nice B2B reverse invoice and don't have to break your head around world wide (and especially EU) tax laws.
I really hope Stripe will double down on the whole MoR thing, it makes processing payments online so much nicer and less annoying.

Yes, either this one or in my case, I'm just using Tailscale to get into one network with my NAS without having my NAS to be exposed to the internet.
So instead of opening ports and stuff like that, I can just securely go to https://mynas:12345/ (port of my paperless instance) and I'm in there.

Can only recommend this way.
I'm running paperless-ng on my Synology NAS and I love it. I've additionally bought myself a Brother DS-640 scanner to get good scans also on the go and it works like a charm for the last few months.
Also because it's running on my NAS, it's automatically reachable via Tailscale from all my devices and gets encrypted + uploaded to Backblaze B2 once a week via HyperBackup. Setting all of this up took less than one hour.

I can only speak for Germany and from my experience. Their argument was that you only have „one“ customer and therefor should be employed by, in this case, Paddle.
Edit: Should mention it was for a kind of SaaS, the case may be different if you sell physical products online.

We have a saying in Germany for this called „Wo kein Kläger, da kein Richter“ roughly translated „no plaintiff, no judge“. I think it highly depends on how much you’re actually selling, if you’re only within the free limits or just marginal above I’d say nobody cares (for the EU at least).
I’d not recommend it because the tax office knows no mercy, better to go with a merchant of record.

I’ve used Stripe in the past and it was a joy to use. Used it for an simple online shop selling shirts.
In my case I only sold to one country within the EU which is my home country and therefore I didn’t have any problems with EU taxes and stuff like that. If you plan to sell in the EU from outside or to multiple EU countries I’d strongly recommend a merchant of record.
The most known I think is Paddle, as also mentioned in this thread. But their pricing is hidden deep inside their ToS and in general you don’t get that many information just from the website, best to contact their sales department and check with them if they would like to onboard you. But it’s definitely more expensive than Stripe for fees but in my opinion you’ll save that money in accounting as you only get one invoice per month and don’t have to worry about taxes in X countries.
Also a small tip, check if your country has laws on “fake self-employment” (Scheinselbständigkeit in German) because I know for a fact that some (at least German) finance authorities don’t understand how a merchant of record works because even though you have multiple customers, on the paper you only have one, Paddle.
