Except that your bank has just sent you an SMS OTP with the details of the transaction, or has sent you a push notification via their app for you to confirm that it's you.

As someone who has used it exclusively as their mobile OS for three years, it is absolutely ready. Does that mean it's perfect or bug-free? No, but nothing is.

What you propose ("the random data that various tools write to disk") is not _random data_.

Compare the entropy graph of /dev/random against a LUKS volume with a decrypted header, and you will see no difference.
