I've somewhat recently found out that I enjoy hand grinding beans and having the resulting coffee quite a bit.
There's something about the sound, the smell, and the feeling once the last bean is ground, that just works for me.
Maybe some years ago I'd have chastised my future self for enjoying something I certainly couldn't identify in a blind test, but nowadays I'm all for "whatever works."

Okay?
Lots of European cheeses still use animal rennet, including several well known AOC (or PDO in English, I guess) ones with recognizable names.
I can check Wikipedia all I want but that doesn't make several of the cheeses I like to buy vegetarian.

I agree that they're well aware.
I once got stopped at self checkout because I put two vegetables (peppers, IIRC) of different types in the same bag and weighed them together.
They were the same price so it's not like I was trying to pull a fast one one anyone, but "the system" noticed and flagged me for someone to come over.
This was pre-pandemic, and I'm sure they're not less capable now than before.

When I was at (then) Facebook, this was mostly the case, but we also ran data centers with a hundred thousands of servers off a dozen local techs.
Facebook (and Google as well, IIRC) prided themselves on how few people they needed to run the datacenter.
Maybe I'm jaded but "we created 50 jobs" just doesn't hit that hard.
